Here, Laura Winn, PA-C, shares a few fun things she has been doing.
What have you been doing during your time at home?
The highlight of my day is when I get to connect with my nephew and my niece over FaceTime. While we can’t see each other in person, we are still having dance parties and talking about their daily adventures! These are the two little people featured in my photo.
Other than work, I have been digging in the dirt and enjoying the spring weather. I decided to plant a small garden with tomatoes, cherry tomatoes, squash, beans and cucumbers. I really have no idea what I’m doing, but it is so exciting to check on my plants throughout the day. To up my gardening skills, I purchased three basic vegetable gardening books.
What’s the best meal you or your family have cooked recently?
Zucchini boats with a spicy Mexican twist. They were delicious!
Recipe:
- In one pan sauté onions and garlic in EVOO. Then add some red/yellow bell peppers.
- In another pan cook some spicy sausage.
- Once the sausage browns, add it to the peppers.
- Add one can of black beans.
- Add cumin, paprika and cayenne pepper. You can either make your own by searching the internet or use a premade taco seasoning.
- While the mixture is simmering, cut your zucchini in half and scoop out the center. I usually chop the zucchini portion I scooped out and add it to the bean and meat mixture to cook.
- Line up the zucchini in a glass casserole dish and fill the zucchini boats.
- Cook in the oven at 350 degrees for 20-30 minutes.
- Add cheese for the last 10-15 minutes.
- Serve with plain Greek yogurt (or sour cream) and either quinoa or jasmine rice.
If you’re looking for a meatless option, I’ve served the same dish with more beans to my dad and he had no idea it was meatless!
How has telemedicine changed the way you practice medicine?
During this time, I find it incredibly heartwarming to be able to see familiar faces that I have been providing care to for the past several months or even years.
Telemedicine is an amazing tool for providers to be able to continue care for existing patients or start care for new patients. We can safely evaluate lesions of concern, acne, hair loss, rashes and more through telemedicine. We have patients of all ages trying out our telemedicine appointments. Our nurses and staff are trained on how to walk patients through this process step by step.
